I know fall season is pretty much over, but I really wanted to share with you this recipe I found on Pinterest! It's super easy and delicious. I was really pleased with how well these turned out. Not only is the taste perfection, but the appearance of these turned out to be too! I did get a few wonky ones, but the majority were perf! I made a video as well to help you guys out! Apple Cider Doughnuts
Ingredients:
For the donuts:
- 2 cups apple cider
- 3 1/2 cups flour
- 1/3 cup brown sugar
- 1/3 granulated sugar
- 2 teaspoons baking powder
- 3/4 teaspoons salt
- 1/2 teaspoon baking soda
- 3/4 teaspoon apple pie spice
- 2 eggs
- 6 tablespoons of melted butter
- oil for frying
- 1/4 cup sugar
- 1 tablespoon cinnamon
Instructions:
1. Pour the apple cider into a small pot. Heat over medium until reduced in half. Cool to room temperature.
2. Whisk together the flour, sugars, baking powder, salt, baking soda, and apple pie spice in a large bowl.
3. In a measuring cup, combing eggs, melted butter, and cooled cider.
4. Fold the wet ingredients into the dry ingredients until just moistened. Cover with plastic wrap and refrigerate for 30 minutes or until chilled.
5. Turn your dough out onto a floured surface. Pat into a 1/2 inch thickness and cut out your donuts. If you don't have a donut cutter, a cup and a small shot glass will do the trick!
6. Heat your oil to 350 degrees. Cook the donuts 1-2 minutes on each side until lightly browned and cooked through.
7. To make the topping, just combine your cinnamon and sugar until well incorporated.
8. Dip donuts in cinnamon and sugar mixture while still lightly warm.
9. EAT!

Notes:
- I didn't have apple cider you normally buy in a gallon at a store so I used two of those apple cider powder packets and added it to two cups of hot water and then boiled.
- If you don't have apple pie spice, no worries! You can substitute it with 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg
- When flattening down the dough, I had to use a LOT of flour and I mean a LOT. I felt like I was adding way too much, but everything turned out okay. If you find your dough to be really sticky don't be afraid to add lots of flour!
- Feel free to add as much cinnamon as you like for the topping! I sure did :))
