Triple B Muffins

I had been wanting to share a recipe that included blueberries, but wasn't 100% positive on what to make. Then I realized I had six overripe bananas in the freezer so I knew exactly what to make.




I took my mother's delicious banana recipe and just incorporated the blueberries into it. I didn't really measure out how many blueberries I added, so it's really based on how every many you have or would like to add. I actually thought I added too many, but it ended up being the perfect amount of blueberries to my liking. 


I decided to add a streusel topping to these, honestly just because I thought they would look prettier and look less boring, whatever the reason for it, I am so glad I did. The streusel topping made these muffins so much better. The texture it gave the muffins and the perfect extra touch of sweetness it added were both excellent! 


I found these to be the perfect "breakfast to-go" when I didn't have time to make myself an actual breakfast.

Banana Blueberry Muffins
Ingredients:

For the Muffins:
  • 1/2 cup butter (1 stick), softened
  • 1 cup sugar
  • 2 eggs
  • 3 ripe bananas 
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • blueberries (maybe a little over a cup)

For the Streusel Topping:
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 butter (half a stick), softened

Instructions:
1. Set oven to 325F degrees
2. Cream the butter and sugar until fluffy
3. Then add the eggs, one by one
4. Incorporate in the bananas, if using frozen bananas wait til' they have defrosted
5. In a separate bowl, mix together the flour, baking soda, and salt
6. Add in dry ingredients 
7. Fold in your blueberries
8. To make the streusel: in a small bowl add in the flour and brown sugar, and mix together with a fork. With that same fork, you're going to incorporate in the butter. Smashing the butter down, and then wiping down the fork. Do this simultaneously until you have small crumbs. 9. Fill your muffin tins about 3/4 of the way full. If you have any blueberries left, go ahead and place a few on top of each muffin so you'll be able to see them through the streusel
10. Add about tablespoon of streusel to each muffin. (I also didn't measure out how much streusel I added to each muffin, did it based on looks) 
11. Bake for about 20-25 minutes. You can stick a toothpick in to make sure they're done and the toothpick should come out clean.

Notes: 
  • Make sure to wash your blueberries and remove any stems. After washing them, place them in dry kitchen towel and pat them dry.
