I decided to take my favorite cream cheese coffee cake recipe (original) and make it into something more springy/summery by adding strawberries. The original is SO good on its own, adding strawberries to it, made it twice as good. I made this for a potluck we had on Easter and it was a big hit. I wasn't able to serve it until after everyone had eaten dinner and dessert because I didn't get it into the oven until everyone had arrived. But there was a few people that waited and didn't eat any dessert to have some room in tummies for the cake. They all said, "totally worth the wait". You should definitely make this the next time you're invited to a potluck or dinner party. With that said, check out the recipe below and below that, theres a video to help you out! Strawberry Cream Cheese Coffee Cake
Ingredients:
For the Cake:
- 1 cup butter (2 sticks), softened
- 1 cup sugar
- 2 eggs
- 1/4 cup sour cream
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 7-9 strawberries chopped
For the Filling:
- 2 (8 oz) packages cream cheese, softened
- 1 egg yolk
- 1 cup sugar
- 1 teaspoon vanilla
- 5 strawberries chopped
- 1 & 1/2 tablespoons sugar
For the Streusel:
- 1/4 cup light brown sugar
- 1/2 cup flour
- 1/4 cup butter
Instructions:
1. Set oven to 350F with oven rack set to second-lowest position
2. Cream butter with sugar (about 3-4 minutes)
3. Add in eggs and sour cream; beat well (about another 3 minutes)
4. In a bowl, sift together flour, baking powder and salt.
5. Add the flour mixture to the creamed mixture; beat well until combined (batter will be thick).
6. Fold in chopped strawberries
7. Put the batter into a separate bowl to be able to use the mixer bowl to make the filling
8. For the filling, cream together the cream cheese, egg yolk, and sugar
9. Add 5 strawberries and sugar into a blender or food processor and pulse until well pureed
10. Add strawberry puree to the cream cheese and mix
11. For the streusel, mix all the ingredients, pinching together with fingers at first, then if you need a little help, feel free to use a fork
12. Now to put it all together, grease a 9x13 pan and spread half of the cake batter onto the pan. Add all off the strawberry cream cheese filling on top of that. Spoon the remaining cake batter over the top of the filling, and last, sprinkle the streusel on top.
13. Bake for about 50-55 minutes or until middle feels set and not jiggly.
14. Wait at least 30 minutes to cool before digging in (Tip: stick it in the freezer or refrigerator to cool faster)
